Denver, Colo., March 30, 2016 - Award
winning Chef Jensen Cummings was the first chef
in Denver to become a Certified Cicerone (beer sommelier), working to
progress the status quo of beer pairings. Now Chef Cummings wants to
push the boundaries of the beer & food world further with Brewed
Food, a collective food movement the likes of Farm to
Table, Fusion or Molecular Gastronomy, involved in special events,
catering, educational platforms and producing digital media. Brewed
Food, founded in 2014, has a core philosophy to celebrate brewing as a
culinary art by cooking with ingredients and techniques
used to create the best craft beers, rather than the norm of cooking
with finished beers. This original approach of looking at brewers as
chefs and the brewhouse as a kitchen is creating a new collaborative
spirit of inspiration between chefs and brewers.

Food is coming to Portland to collaborate with Biwa Restaurant
and Base Camp Brewery. Chef and Certified Cicerone Jensen Cummings and
Chef James Davidson of Biwa Restaurant will present a six course Brewing
Dinner, with every dish featuring a brewing ingredient from breweries
New Belgium and Base Camp along with beers
from these breweries paired with each course.
Biwa
is a izakaya style restaurant that is known for great sake, sashimi,
small dishes, grilled food and a nice atmosphere. The drinks list
includes a a generous
amount of sake, shochu and izakaya inspired, modern and classic
cocktails. The family-like staff are wonderful and the food is direct,
fun and local. Biwa is the expression of our love for restaurants, the
spaces we inhabit and the amazing everyday foods and
table culture of Japan. Biwa has been open since 2007 and is a very
proud part of Portland's vibrant restaurant fabric.
The
Base Camp family has grown a bit since we first opened our doors. Our
crew represents decades of work in the brewing industry and a common
love for life here
in the Pacific Northwest. When we make the time to get out of the
brewery, you can find our team out having fun. Whether we're in the
water off Short Sands Beach, setting up camp on the Wonderland Trail,
slashing pow turns in the Outback on Bachelor, or drifting
a line out in the Umpqua we are proud to live, work, and play in the
Pacific Northwest.

Jensen
Cummings bio: To say that Jensen Cummings was born into the industry is
quite the understatement. He is the fifth consecutive generation of
restaurateur in
his family. With his great great grandfather opening La Fond House in
1900 in Little Falls Minnesota. Great grandfather, grandfather and
currently three uncles all took up the family biz as well. Jensen’s
generation also includes his younger brother, and Chef
Cummings is living up to the family heritage with his leadership in the
industry!
